Cauliflower Quinoa Mashed Potatoes

Es uno de mis platillos favoritos del Vegan Inc. Aunque la comida este un poco cara, realmente vale la pena probarlo.

I’m pretty sure this had an actual dish name but I can’t remember it for the life of me and they don’t have an online menu. Sigh. This was one of my favourite meals ever and I think I ate it 3 times while in CDMX. Amazing flavours, the mashed potatoes were super creamy and unlike any other ones I’ve had since going vegan. The cauliflower had just a little bit of spice, and the kale chip on top was a nice touch.
