Mosaics omg. The worst thing about Mosaics was I didn't visit until the last day

of my trip to Edmonton, if only I'd gone there sooner - I'd have had breakfast there every day. Mosaics is exclusively vegetarian and vegan friendly :) The food was absolutely incredible. I struggled to choose between the Hummus & Truffle Reishi 'Shrooms ($12) and the Scramble ($16). In the end I went for the Scramble and it was a gigantic plate filled with tofu, veg, vegan sausage, fruits and the best hash-browns I've ever had (sorry England). My ex, Tanbay had the giant vegan pancakes with fruit, vegan cream and sausage ($15). The portions were so generous I got a bit worried half way through that we wouldn't be able to finish it, but it turns out they do take-away boxes! What's better than the best breakfast ever? When you can eat the left over for lunch of course! Of all the places we ate in Edmonton, Mosaics was our favourite.

A short comment from current Hungarian bf Tamás: here are some things that we are defo gonna write to (+poke) them about: we wonder whether they are a co-op (check this for info about co-ops in Canada: https://www.ic.gc.ca/eic/site/106.nsf/eng/h_00000.html) Do they have any organic plant-based meals? We think there would be a market niche for that... like basically anywhere (the legal differentiation of "non-organic" and "organic" produce is basically an euphemism for "poisonous" and "a bit less poisonous"... which is an outrage! All fruit & veg should be organic, everywhere, not just the privilege of wealthy individuals who can afford to buy the more expensive, healthier stuff). Also: are at least some of their ingredients locally produced? (check this: https://en.wikipedia.org/wiki/Environmental_impact_of_transport) Were the agricultural workers paid well, in a fair trade fashion?
