Beetroot ravioli filled with vegan cheese and horseradish

This was so beautiful, creative, delicious! The ravioli was made from thinly sliced beetroot. The vegan cheese filling was amazing. Sprinkles of pistachios and tiny cubes of beetroot completed the dish.
