Baigan Bharta & Aloo Gobi

I love Indian food and I love the fact that so much of it is vegan!!! Bharta is an eggplant based dish with lots of spices and such a nice texture with the rice. And aloo is a potato and cauliflower dish also wonderfully spiced. Highly recommend! I ate 3 plates 😅 #veganin2020
