Aubergine, Chickpea and Cashew Kofta

Delicious and filling although a wee bit dry without the chutney. Perfectly spiced too

Super yummy kofta, and a combination I have never had before in this kind of dish. Wasn’t dry at all, which can often be a downfall of a kofta. The accompanying banana chutney was wonderfully fresh and complimented the dish incredibly well. Would highly recommend!
