Hey there! Whether you’re a budding vegan or vegetarian or just someone looking to eat healthier, this guide is for you. We have tasted and reviewed countless stalls within the NUS Campus as well as in the vicinity, and we’ve created this guide just for you. We’ve interviewed a variety of stakeholders to find out what they feel about having a plant-based diet in school, so stay tuned!
So, who are we? Well, we’re Cody (@cody), Lavanya (@lav1212), Chu Yu (@consciouscookieee) and Matilda (@musclecookie) – a group of students from NUS Vision of Equality for a Greener Earth (VEGE), that aims to promote plant-based diets within the NUS community.
Cody is a year one student studying Business. He hopes to be able to change corporations from the inside to adopt more ethical and sustainable practises or to even start his own company to inspire others to make the green change! A little on the personal side, he’s been a vegan since March 2017 because of ethical reasons, but upon more research into the subject, he also became concerned with the environmental issues too!
Lavanya is a first year studying Environmental Sciences. Having grown up a vegetarian due to religious reasons, she didn't really understand the environmental and ethical reason behind a plant-based diet until she was older. After watching documentaries and videos of the horrors behind factory farming, including the 'Meatrix' and “Cowspiracy”, She realized that one of the most powerful ways we can individually make a difference to animals, people and the environment alike is a plant based, vegan diet. Joining NUS VEGE and compiling this vegan guide has given her much hope after feeling quite depressed at the state of our food industry, as she got the opportunity to meet like-minded people and was able to unravel the variety of options available for vegetarians and vegans on and off campus. She hope that this guide helps and inspires you to live more plant-based- because it's delicious, nutritious and fun!
Chu Yu is a year 1 student studying Geography and Global Studies. She’s been an advocate for environmental issues since forever, as well as plant-based diets since March 2016 – her first year in junior college. She’s part of the core team in NUS VEGE and NUS SAVE (Students Against Violation of the Earth). You can follow her @consciousmochiii and @consciouscookieee for snapshots of her plant-based lifestyle, as well as her website consciouscookieinsg.wordpress.com for useful articles, research & other resources regarding a range of environmental & social issues!
Matilda is also a first year student studying Environmental Studies. Having only just recently converted to veganism, she’s a newbie in the vegan scene, eager to try out delicious vegan food. She loves animals more than life itself and hopes to be able to work with them in the future. As a hobby, she makes vegan bakes for fun and enjoys eating the failures anyway.
