The waitress didn’t quite recommend this dish as she personally doesn’t like the “chew” of
seitan in general. But I thoroughly enjoyed this. The cutlet was thin and well seasoned, the mushrooms in marsala were just drool-worthy, and the polenta’s texture was perfect. The polenta wasn’t well salted, but in a bite together with the savory cutlet and mushrooms- it provided the perfect balance. I asked for a salt shaker but never ended up using it. The broccolini was perfectly cooked and seasoned, and those little slices of garlic - they tasted confit! So rich, I’d take a jar of just those!
