I would be willing and want to try this again, but this particular sandwich wasn't
the best. I think maybe they were busy and the grill was just not clean. The coleslaw was delicious but the seitan was completely charred and black char was all over and it was super chewy. I think maybe it was a fluke and they never do festivals or popups so don't usually run that speed.
