Here's the first course I got at Torre Colombaia (the place whose dishes I started
to review yesterday).
This is farro with herbs pesto. They make the pesto themselves with herbs from their own organic garden.
And it is so delicious and original, very different from the regular pesto. I could taste basil, but also oregano, sage and maybe thyme. It was really good and different.
The farro turned out really creamy (thanks to the amazing pesto 😋) and perfectly cooked.
