Omit the feta to make this vegan. The veggies could be seasoned better and there
wasn’t a whole lot of hummus, but the veggies were fresh and crisp & the portion was filling :)

One of the better grilled aubergines Ive had though its just a tad bland, the
roasted peppers gave it a nice smoky flavour. Wouldve been better with a punchy sauce or some cracked pepper & salt!
I think it was an okay sandwich. Lots of greens in it and I liked
the marinated capsicums. The eggplant could be more flavourful though, and the bread could be improved too as it was quite bland and chewy.
Asked for it without feta to make it vegan.
