Growing up in a family with German roots, sauerkraut was always a staple at dinner.
I never thought I’d be able to find a Reuben dish as a vegan, however! Smoked hedgehog mushrooms, potato croquettes, pickled cucumber, turnip, sauerkraut, cashew Swiss cheese, mustard mayo, teff-pumpernickel soil, and mustard seed salad. Amazing!!!
