I picked sushi rice as my base; vegan salmon as my protein and added grilled tofu as an extra protein; for the mix-ins I got avocado, edamame, red onion, cucumber and baby spinach; for my dressing I chose sesame; and for the toppings I got fried onions, garlic flakes and chilli flakes. I got this for the train ride back to London and I really think that poke bowls are great train meals. They can be eaten cold, there’s variety and it’s filling. Was so happy with this choice.
