I unfortunately didn’t enjoy this dish that much either. I chose vegan egg over scramble
tofu, which I regret because the vegan egg texture was a little off to me. It might be because I haven’t had vegan egg that many times, but it was just much more soft and squishy than I expected it to be. It also wasn’t seasoned very well :( Adding hot sauce made it tastier. The potatoes were decent and I enjoyed the English muffin that came with the dish. I did enjoy the mushrooms, onions, and bell peppers that were in the scramble.
