One of the most amazing meals I’ve ever had! A full, large sweet potato is

at the heart of it. But there’s so much more! The ingredients include: a bed of tri-colored quinoa, amaranth, long-grain brown rice, colucari red rice, chickpeas, Brussels sprouts, sun-dried tomatoes, sweet onions, coconut cream, peanut butter, ginger, garlic, pink Himalayan sea salt, turmeric, chili flakes, pepitas, rosemary, and hemp seeds. An absolute tour de force! I also enjoy the menu listing pro-vegan documentaries. 🍠 🎥

It is covered with Brussels sprouts, chickpeas, sundried tomatoes, sweet onions, and garlic that were slow cooked in coconut cream, peanut butter, ginger, turmeric, pink Himalayan sea salt, and hot chili flakes, and topped with a bit of rosemary. This was spectacular! How do they come up with these ingenious combinations of amazing ingredients? Such a symphony of flavors and textures!
