The awesome news here is that, IPPUDO has recreated its global signature ramen Akamaru Shinaji

for plant-based consumers (vegan ok) and it’s called Akamaru 1.0. It will be launched for a limited period of time, from 4th May to 30th Jun 21 in all outlets. It cost $18.85 at MBS outlet & $16.85 for the rest of the outlets. Akamaru 1.0 contain alliums but they have another ramen in their menu (i.e. Veggie Dashi) which broth is alliums free and can requests for alliums free ingredient/ egg free.

Akamaru 1.0 bowl is a collab with @growthwellfoods , a local plant-based nutrition company specialising in plant-based foodie. The plant based ChaShu is made with premium non-GMO soy and marinated with IPPUDO’s signature soy ChaShu sauce. It is high in protein and free of cholesterol, GMO and preservatives. 😋 super likey the chashu! I ate finish both slices and was thinking about having more (haha greedy). Healthy and yummy plant based chashu (~understand that the chashu is alliums free!) Akamaru 1.0 broth is made of mushroom, soy milk, IPPUDO’s original kaeshi (Soy Sauce) and aromatic porcini mushroom oil. It’s served with homemade eggless whole wheat noodles, black fungus, spring onion, special blended spicy paste (v. mild spicy to me, suitable for all level of spicy taker) and fragrant garlic oil. The soup is so tasty that I just can’t stop drinking…so comforting. It’s thick in soy flavour and the bowl has v. generous portion of ingredients. I had a very filling delicious meal that day and will go back for another bowl definitely...! Hopefully we can create huge demand of this and they will put in their all time menu..haha.

For the first time, I finished everything on my bowl outside. Including the soup. Noodles

were medium and just right.


Quite impressed by this plant-based ramen!! The broth was milky and fragrant, and the noodles

had a good bite (they’re wholegrain). The cha shu tastes like chinese mock meat but with a slightly better meat texture. Tbh the cha shu could be improved to be more like real cha shu in taste and texture, but this is a great attempt at veganising ramen and I’m happy with it already!

It was alright i guess.... I wouldnt pay 17++ sgd for this again. Maybe because

it was a takeaway order but mine was very oily. Maybe more negi and fungus would be nice. #abillionturns3


tried this with @wildvegann! broth was rich in flavour and texture of the noodles was

good, but the chashu tasted like regular gluten mock meat. definitely worth a try but wouldn't go back for this considering the high price point.

It’s been a while since I had anything from IPPUDO - that was when I

wasn’t on a vegan diet. There’s a new seasonal vegan ramen offering from IPPUDO from 4th May to 30th June! 🍜 $16.85 at all outlets, $18.85 at MBS. They took their signature creamy broth ramen, Akamaru and made it vegan with probably the first ever “chashu” produced by a local plant-based nutrition company Growthwell Foods.

The ramen noodles are eggless and whole wheat. The broth was thick with a soy milk base, their original kaeshi soy sauce and porcini mushroom oil. I can’t help but thinking of the possibilities that can come after this, maybe a spicy ramen please? Nonetheless a promising venture for this big ramen chain. #abillionturns3


The soymilk-based broth, topped with spicy miso and garlic oil/?soy sauce gave the ramen a

really inviting fragrance. The broth was not as thick as I imagined but it certainly packed a rich flavour.
I enjoyed the ramen which was al dente as per instructed. It’s great that diners get to choose the degree of doneness of their ramen.
What would I change? More spicy miso, more spring onions, more kelp and ramen. 😋
The “chashu” though was a letdown. I thought it was overly-hyped. The texture and taste reminded me of the mock ham my parents used to buy from the local Chinese mock meat suppliers many years ago. Not saying it was awful, its just that I didn’t think there was anything to rave about really. I’ve had better mock cha siew with a less rubbery texture. Not sure if it was me but I thought the chashu tasted slightly fishy at first.

u want the noodle to be, soft/median. This is not a salty ramen to suit local tastes but personally i prefer more salty, the mock ham is a add on but hidden by the soup which is rich of favour soya milk and oil just blend in so well.
Recommended for those had never tried ramen at all and for those who miss travelling to Japan for it. Do try out before it ends by June.. thankful the restaurant made such a effort, was hoping it will permanent on menu or there more variety version coming up like spicy ramen?

it away - tastes more like soba than #ramen - soup is thicc but it tastes like instant soup packs and the meat alternatives is your usual gluten-y mock meat😞😞oh well, it’s a start tho🥳hope the 2.0 is better😉 #veganramen
