Throwback to a vegan dish I had in Tainan, Taiwan.
Fragrant, tasty, and very balanced in terms of taste and texture, with the refreshing pickled cucumbers adding crunch to every bite with the minced omnipork rice. Relatively cheap and affordable as well!
