What You'll Need

Ingredients

For the Homemade Raw Vegan Gluten-Free Teriyaki Sauce:

    • 1/4 cup Tamari (or coconut aminos for soy-free)
    • 1 tablespoon Rice Vinegar
    • 1-inch piece fresh ginger, grated
    • 1 clove garlic, minced
    • 2-3 tablespoons water (to adjust consistency)

For the Wraps:

    • 1 large ripe mango, julienned
    • 1 cucumber, julienned
    • 1/4 head red cabbage, shredded
    • Fresh Coriander or mint leaves, for garnish

Equipment

    • Small mixing bowl
    • Whisk
    • Cutting board
    • Sharp knife or julienne peeler
    • Large shallow dish or plate (wider than your rice paper)

How to Make Your Refreshing Raw Vegan Mango Wraps

Prepare the Teriyaki Sauce

  1. In a small mixing bowl, whisk together the tamari, maple syrup (or agave), sesame oil, rice vinegar, grated ginger, and minced garlic.
  2. Add water one tablespoon at a time until you reach your desired consistency. The sauce should be pourable but not too watery. Taste and adjust sweetness or saltiness as needed. Set aside.

Prepare the Wraps

  1. Prepare all your vegetables and mango by julienning the carrots and cucumber, thinly slicing the bell pepper, and shredding the red cabbage. Arrange them neatly on a platter for easy access.
  2. Fill your large shallow dish with warm water.
  3. Take one rice paper wrapper and immerse it in the warm water for about 15-20 seconds, or until it becomes pliable and soft. Be careful not to oversoak, or it will tear easily.
  4. Carefully lay the softened rice paper flat on your clean cutting board or work surface.
  5. Arrange a small amount of each prepared vegetable and mango in a line near one edge of the rice paper, leaving space on the sides.
  6. Fold the bottom edge of the rice paper over the filling, then fold in the sides. Tightly roll the wrap from the bottom upwards, creating a neat, firm wrap.
  7. Repeat with the remaining rice paper wrappers and fillings.
  8. Serve immediately with the homemade raw vegan teriyaki sauce for dipping.

Variations & Tips

  • Add a kick: For a spicier wrap, add a dash of sriracha or a pinch of chili flakes to your teriyaki sauce.
  • Protein power-up: While these are naturally light, you can add thin strips of marinated firm tofu (if you're not strictly raw and can include baked/cooked elements) or even finely chopped tempeh to the wraps for extra heartiness.
  • Creamy texture: Include slices of fresh avocado for a rich, buttery contrast to the crisp veggies.
  • Alternative greens: If rice paper isn't your preference, try using large lettuce leaves (like butter lettuce or romaine) or even collard greens as natural, sturdy wraps.
  • Thin is in: For easier rolling and a more elegant wrap, ensure all your vegetables are sliced or julienned as thinly as possible. This makes for a more pleasant bite!
  • Don't overfill: It's tempting to load up your wraps, but less is often more with rice paper to prevent tearing. You can always make more!
  • Make ahead: While best enjoyed fresh, you can prep your vegetables and sauce ahead of time and store them separately in airtight containers in the refrigerator. Assemble the wraps just before serving.
